Bring on the Burgers!

My latest addition to my cookbook collection is "The Best Veggie Burgers on the Planet: 101 Globally Inspired Vegan Creations Packed with Fresh Flavors and Exciting New Tastes" by Joni Marie Newman that came out on May 1.  I pre-ordered it through Amazon was excited to find it at my door when I came home from school the last week in April.  This looked like it would be the perfect book for summer grilling.  Well, first of all, the book itself it gorgeous.  It's heavy for a paperback, with thick,colorful pages and pictures for about every third recipe.  To boot, the recipes are great too!

So far, we have tried three burgers:

Our first burger adventure was the Chipotle Sweet Potato Burger.  Chad and I love all things chipotle, so this was an easy choice.  The burger had a great texture from a combination of baked sweet potato, tofu and cashews.  We grilled these outside, which could have gone better.  Next time I will take Joni's advice and freeze the burgers before grilling them.  We had a lot of burger stuck to the grill, but they were delicious, regardless.  We topped them with avocado and tomatoes and skipped the buns.  I also made a side of black bean and rice salad with some homemade chipotle mayo.

The next burger was the Jamaican Jerk Burger.  We had some leftover seitan from making Seitan Brew Stew (from American Vegan Kitchen) earlier in the week, so this burger was really easy to throw together.  I don't know if I added too much liquid or not enough dry or what I did, but this burger never really held together.  We baked it, so it wasn't a big deal, but it turned out to be a crumbly, yet tasty, burger.  We'll definitely have to experiment a bit more with this one if we want to grill it.  I enjoyed the flavor from the pineapple and hot peppers. 

Tonight we made Garlicky Ranch Potato Burgers.  I am pretty much in love with these burgers.  They were SO easy to make and were FULL of flavor, despite an ingredient list shorter than 10 ingredients.  This is definitely a recipe to keep in mind, because usually have everything on hand.  They were like bulked up, super tasty hash browns in burger form.

Cook Book Challenge Week #10

Tonight's Menu:  Sweet Potato-Chipotle Bisque

I've been looking forward to this week for a while, because 1) I LOVE Mexican and Latin-inspired cooking and 2) I don't own the book, so I've really only looked through it a few times at Barnes and Noble.  I decided to start out the week with two easy soup recipes.  My jaw is still quite swollen and stiff, so I can't handle much chewing action and the weather has been perfect for soup, but these soups were no compromise on flavor!

Last night we made the Cuban Black Bean Soup.  Black beans have long been my favorite bean, but lately we've been eating far more chickpeas, so I was excited to get back to the black beans.  We even made an extra batch while we were at it.  This soup was pretty simple, but very flavorful.  You soak the beans overnight, simmer for a couple hours, add the Sofrito (which is garlic, onion, bell pepper, tomatoes, seasoning), season with liquid smoke and lime juice and serve!  For the minimal amount of ingredients, like I said, it was really good.  Terry lists the liquid smoke as optional, but I would definitely recommend it. Chad had two bowls and a piece of pie in the time it took me to eat just one bowl... someday I'll be able to use my molars again!  I had leftovers for lunch today with some cornbread, and it was just as good as last night.

Tonight we made an equally easy and delicious soup-- Sweet Potato-Chipotle Bisque.  The ingredients were minimalist in this recipe, too and I followed everything, only using coconut oil in place of olive oil.  It was super easy for me to eat, because once everything is softened you blend it (potatoes, onion, garlic, chipotle) and then add "cream" (I used coconut milk), lime juice and cilantro at the end.  It was so fresh and flavorful and the smokiness from the chipotle made the soup taste thicker than it was.    We served this soup with cilantro-lime rice and black beans.  It was very light and filling and ready in less than an hour.


Not sure what we're making tomorrow, but I'm looking forward to soup for lunch again!

Cook Book Challenge Week #9

Last Night's Menu:  Smoky Red Bean Chili with Chipotle-Cornbread Dumplings and Chocolate Chip-Walnut Rice Pudding
Tonight's Menu:  Mexican Rice and Bean Bake with Cheezee Sauce

We had an early dinner again last night, partly because it was raining after school so we couldn't run and partly because it was an easy slow cooker meal.  I threw everything in the slow cooker before leaving in the morning, which was as easy as opening a few cans and chopping a few vegetables.  Then, per the recipe, about 45 minutes before we were ready to eat, I mixed up the dumplings and plopped them atop the chili.  By the time they finished, the entire top of the slow cooker was filled with fluffy dumplings!  We love cornbread with chili, so this recipe saved time and effort.  The dumplings were really good, but not as spicy as I expected.  The chili was smoky (no surprise) and spicy (again, no surprise), but next time I might add some extra vegetables such as corn or broccoli and maybe an extra chipotle pepper.  There was enough for a filling dinner and leftovers for lunch.

We ate the rice pudding for dessert later in the evening.  It was the first time I made rice pudding, which is really no more difficult than making plain rice.  Since I hadn't made this before, I followed the recipe pretty closely.  I used almond milk, but cut the sugar in half.  Also, I served it with a sprinkle of cinnamon.  It is for sure something I will keep in mind for a sweet, but not too unhealthy treat!

Tonight was another quick dinner, Mexican Bean and Rice Bake.  It was really quick to prep and fairly quick, ready in just under an hour.  I also made the Cheezee Sauce, which was an excellent choice.  I melted in to the bake and brought everything together.  I didn't take a picture of this meal, because, well... it was beans and rice.  Let me give you a visual-- imagine pinto beans and rice on a place with some runny sauce.  I'm not saying it was bad, it was really good, just pretty simple and not the most photo-worthy meal that I've made.  We served it with a big salad and tortillas on the side.  As my dad would say, "It hit the spot."  In fact, if I don't leave the kitchen soon, I might eat the whole pan...

Cook Book Challenge Week #3

Tonight's Menu: Chickpea Chili Burgers

This week's cookbook, as listed above, is "The Urban Vegan."  To be honest, I've never looked through it before last weekend, so I'm looking forward to some more new ideas.  It's also the first time I've checked out a cookbook from the library.  All sorts of excitement!  Without further ado, the food...

Chad was in charge of last night's dinner-- Curry Cashew Casserole.  He didn't say much or complain about it, so I'm assuming it was pretty easy to throw together.  I did help a little by making the cashew butter with raw cashews in the food processor.  I don't know if the raw cashews made a difference, but I had to add a little oil to bring it together.  The only other change he made to the recipe was using curry powder in place of curry paste.  The recipe had lots of veggies-- broccoli, tomatoes, red pepper-- but lacked some kick from the spices.  I think next time I would add extra curry and maybe even crushed red pepper or cayenne to make it more interesting.  We served it over brown rice, and it ended up being a satisfying meal.  With a few changes, I would make this again as a quick weekday meal.  (I only snapped one picture before my camera battery died, so it's not the best quality.)

Tonight's menu included Chickpea Chili Burgers.  Chad did most of the work again tonight (yay!) and I just had to finish blending, forming and frying the burgers.  I wasn't really sure that I would be very impressed with them and wasn't sure about the bread and oats in the mixture, but they ended up being more than I expected.  They have a different texture than most other burgers that we've tried-- crispy on the outside and chewy, but smooth on the inside.  Definitely a good "different."  We topped them with guac, tomatoes and chipotle mayo (my easy recipe below).  They were so good, we both ate two, loaded with toppings!

Chipotle Mayo
1 chipotle pepper in adobo, seeded
1/2 c Nayonaise or Veganaise
squeeze of lime juice

Add pepper and Veganaise to food processor.  Blend until smooth.  Squeeze lime juice into food processor.  Pulse a few more times.  Chill until ready to serve.  (Pretty easy, huh?)

I'm typing this in our kitchen, while Chad is cleaning up and washing dishes... perhaps I should go help?

Cook Book Challenge Week #1

Today's Menu: Tortilla Soup

Yum, Yum, Yum!  I didn't get home until late tonight, so Chad was in charge of dinner.  He said the soup was really simple (bonus!).  He did make a few intentional changes-- black beans instead of pinto, chipotle peppers in adobo instead of jalapenos, and one UNintentional change-- a CAN of peppers, instead of the two the recipe called for!  We adjusted the spice by adding extra broth and a can of tomato paste.  This is definitely something we'll make again soon!


Now, off to bed to dream about a snow day tomorrow :)
